So my friend was eating a bag of pickles from the store today and mentioned that he preps his meals on Sundays to make it easy, and I asked if he ever made his own and he had never tried it. Well, it’s just too darn each to make fridge pickles, so I wanted to put this together for him and thought you might want to take a look as well.
So all you need are these few things from the store and 5 minutes:
- 5-10 cucumbers depending on size
- 2 cups of water
- 1 cup of white vinegar
- 1 tablespoon kosher salt
- 1/2 teaspoon sugar
- dill to taste (err on the side of too much)
- 1 head of garlic skins removed, cloves smashed (less if its a strong garlic)
- 10 peppercorn kernels or 1/2 tsp of ground black pepper
- Bring a pot of water, vinegar, salt, and sugar just to a boil then take it off the heat and let it cool down (cold glass+boiling liquid can = big mess).
- Stuff the jar with sliced cucumbers (I use the ole Mandolin just for consistency), garlic and dill.
- Pour liquid over contents of the jar
- Seal it up and wait a week for the flavors to meld (mine never makes it a week, but good luck!)
At this point, you could have pickles for up to 2 months. If you get good, take your own spin on it. Replace the sugar with maple syrup for a fall take, add red pepper flakes or jalapenos for a touch of heat, or my favorite…both!
